Ingredients
3 cups shredded rotisserie chicken meat
1/3 cup chopped red onion plus additional for garnish (optional)
2 tablespoons chopped cilantro plus additional for garnish (optional)
2 tablespoons fresh orange juice
1 tablespoon fresh lime juice
1 teaspoon lime zest
1 teaspoon orange zest
12 (6-inch) flour tortillas
1/4 cup olive oil
1/4 cup plain nonfat Greek yogurt
1 avocado, peeled, pitted and chopped
1/2 cup quartered grape tomatoes
1/4 cup crumbled queso fresco
Directions

1. In large bowl, stir chicken, onion, cilantro, orange juice, lime juice, lime zest and orange zest. Makes about 3 cups.

 

2. Place 1/4 cup chicken mixture on bottom half of each tortilla; tightly roll up tortillas around filling and place seam side down on rimmed baking pan.

 

3. In large skillet, heat oil over medium heat. In 3 batches, cook flautas, seam side down, 5 minutes or until golden brown, turning once; transfer to large plate and keep warm. Makes 12 flautas.

 

4. Serves flautas topped with yogurt avocado, tomatoes, and queso fresco garnished with onion and cilantro, if desired.
